Hot morning? Make a cool breakfast!

Try steel cut oatmeal, homemade maple cream and homemade banana ice cream.  The contrasts in in temperatures and textures make this dish a sure winner.  Guests at the Adobe Rose Inn refer to it as “The Beige Breakfast” and repeatedly request it.

Ingredients

Banana Ice Cream

  • 3 large VERY ripe bananas
  • 1/8 – 1/4 cup sugar or to taste
  • 1/8 teas. Cinnamon or to taste
  • 1 1/2 cups heavy cream (approximately) All the contents in the blender should equal 3 cups.

Serves 10 -12 and leftovers last several weeks in an airtight container in a 0 degree freezer.

Maple Cream

A little of this goes a long way.  The mixture is 1 part pure maple syrup (Don’t substitute) to 3 parts heavy cream.  Amount used depends on number of guests served.  One serving is about I TBS.  Its shelf life in the refrigerator is short, so don’t make more than you will serve at one time.

Banana Ice Cream

The night before serving, peel bananas and place them in a blender. Blend until smooth. Add sugar and cinnamon. Slowly pour in the heavy cream. Blend until smooth. Transfer mixture to an ice cream maker and process according to manufacturer’s instructions. Place mixture in an airtight container and freeze over night before serving.

Maple Cream

Place cream and syrup in a small sauce pan over a slow heat.  Stir frequently until the mixture is thick and smooth.  Remove from heat.

Steel Cut Oatmeal

Prepare to manufacturer’s instructions.

Place a serving of cooked, hot oatmeal in an individual serving bowl.  Drizzle with warm maple cream.  Top with a scoop of banana ice cream.  Serve and enjoy!
